What’s better on Cinco de Mayo than a good guacamole! This is my go-to recipe for quick and easy deliciousness and for those times when a lot of ingredients just aren’t on hand. I whip this up for weeknight dinners and use it for a ramped up version of avocados on toast!
What You Need
Avocado(s)
Red Onion
Lime Juice
And salt & pepper to taste
To Make
Here’s the real trick to making this great. Dice your red onion and squeeze lime juice on top. Allow to sit awhile (the longer the better, but I’m impatient, so in this house I give it 10-15 minutes while I chop and smash my avocados)
Then sprinkle salt on those red onions to soak up a little more of that lime juice.
Mix onion mixture and avocados together, salt & pepper to taste and viola! Easy, three ingredient guacamole!
For a maxed out version, add cumin, fresh cilantro, chopped tomatoes and jalapenos for heat, but truth be told, maxed out or minimalist form, they’re all my favorite!
