When it comes to summer dinners, there is nothing my family devours more than taco nights! And this easy Skirt Steak Marinade is the perfect thing for those lazy summer days at home!
What You Need
Skirt Steak
6 Limes (four for the marinade and two for serving)
4 Cloves Diced Garlic
2-3 Jalepenos (one for the marinade and 1-2 for serving)
Tacos, corn or flour
All the toppings: cilantro, avocado, pickled red onion, cotija cheese
How to Make
For the Marinade
Mix Juice of four limes, with diced garlic and one sliced jalapeno. In a shallow bowl or dish coat skirt steak with marinade and let sit for 30 minutes.
For the Tacos
Grill skirt steak over high heat (either on grill or on grill pan over stove). We prefer medium rare, and cook for 3 minutes on each side. Let skirt steak rest for 10 minutes, then cut in thin slices against the grain. Serve wth flour or corn tacos, with all your favorite toppings! For us thats roughly chopped cilantro, cotija cheese, extra lime and jalapeno and topped with pickled red onion (simply slice red onion, then let marinade in juice of one lime for 10 minutes, drain then serve!). For sides my family loves corn and of course chips with our favorite salsa and verde! And of course the best part of meals like this is that everyone can help themselves and create their tacos to their own liking!
These days we’ve loved taking a little time to set the table. The kids are candle obsessed and I’ve found when the table is set with fun thrift store finds, A) nothing is too precious as it all costs just a few dollars and B) we as a family seem to linger longer at meal times, enjoying ones company as well as the yummy food!
