The dog days of summer are upon us and the thought of actually cooking sounds dreadful. Dinners for us right now consisit of light summer salads, crudites and this simple hummus dip with easy charcuterie board. It’s light and easy and so versitle. I find this the perfect menu when the pantry or fridge is a bit bare, and or when we need to use things up.
For the dip, I start with store bought hummus, of course you could make your own. Top with sliced cucumber, feta cheese and a generous drizzle of olive oil. For my charcuterie boards, I always ensure I have a variety of the following: a bread or cracker, pitted olives, a nut (pistachios shown), a meat or two, and sliced veggies for dipping, cucumbers, red peppers etc. Clearly this was a day where the veggie options were limited and for those occasions I always keep a stash of these grilled artichokes on hand! They’re delicios and make a great compliment to any mediterrain dish or meal and truth be told, I’m known to eat them straight out of the jar when time is lacking.
And of course when it comes to summer dining, al fresco is always a delight. The kids and I have really been taking our time to set a table. Bring out the linens, I currently love them from here. A vase of flowers (you can find my vintage vase along with similar ones here) and vintage and thrifted dishware. I find when the table is set, we all linger just a bit longer, and of course when the kids get restless it’s a great spot for Brian and I to sit, enjoy a drink and watch the kids play in the yard.
